WHITE ATOLE
(Atole Blanco)


Ingredients:

1 cup of corn dough (masa de maíz cacahuacintle)
8 cups of water

Procedure:

Heat 6 cups of water in a pot.

With 2 cups of water left over, dissolve the corn dough and pour it into the pot, straining it through a fine collander. Stir constantly until thick.


FRUIT ATOLE
(Atole de Frutas)


Ingredients:

5 tablespoons of corn starch
5 cups of milk
1 cup of strawberries
sugar

Procedure:

Dissolve the corn starch in a 1/2 cup of water.

Mash up the strawberries, add sugar and heat until they soften.

Add the milk and the maicena and stir until thickened.
